Les Climats

For anyone who loves Burgundy,  the name already says it all, passionately.

Carole Colin and Denis Jamet have opened Les Climats restaurant to share their passion for Burgundy wines.

For several years, Carole and Denis have been going down to Burgundy almost every week to meet, taste and buy. During their trips, they’ve developed special relations with the winemakers they love the most.

Their wine list is absolutely amazing, representing the varied wine heritage of an entire region and the work of over 210 master winemakers.

The Wines

François Raveneau, Hubert Lamy, Arnaud Ente, Vincent Dancer, Etienne Sauzet, Jean-François Coche-Dury, Jean-Marie Guffens, Sylvain Pataille, Armand Rousseau, Denis Mortet, Jacques-Frédéric Mugnier, Thibault Liger-Belair, Cecile Tremblay, Domaine de la Romanée-Conti, Domaine Leroy...  

Our guests have endless choices; our wine list is a two hundred pages book. 

The Cellars

210 Winemakers
1 200 wine references from 17€ à 7 636€

In the day-cellars - les caves de jour - kept at ideal temperatures, await 3 350 bottles of white and 3 550 bottles of red, ready to be served. 

Our wines are voluntarily very reasonably priced (starting at 17 euros).

 

 

The Tastings

Several times a month, at the Bar, our "sommeliers" (wine waiter) organize tasting events where you can meet the wine growers and makers, and taste the wines we love.  

We offer 2 types of B3 events : "Bourgogne Bubble Bar” and “Bourgogne Bourgogne Bar”.

We also organize Burgundy Wine Tables with our favorite Wine makers. You can find the schedule in the Events category or on our Facebook page.

Ex-owner of L’Escargot Montorgueil and owner of “Chez Monsieur” (Royal Madeleine), he was looking for a showcase for his fine Burgundy wines..
Denis Jamet says “ I was raised in a Burgundy wines loving family. I love the wine there and the people who make them”.

Denis Jamet’s associate, Carole, managed “Chez Monsieur” (Royal Madeleine) for several years. She now  runs Les Climats, welcoming diners with her great charm and professionalism. The heart and soul of the restaurant, she and Denis form the perfect team.

Le Chef Julien Boscus

 

Julien Boscus was formed with Pierre Gagnaire and Yannick Alléno. His cuisine, created after many years of experience in France and abroad (London, Seoul) is contemporary and creative. His dishes are full of delicious flavors.

On the lookout for the best products, Julien Boscus only selects producers that fully meet his expectations—natural products of the highest quality. 

A native of France’s Aveyron department and the son of a pork butcher, Julien is from a new generation of thirty-somethings who are now running their own kitchens after 15 years’ experience working alongside the top chefs.

DUBLIN BAY PRAWNS,
Sauteed and seasoned with a Corinthian sauce argan oil, tomato heart, violin zucchini and almond emulsion. 

CHUCK OF BEEF, Seized in Sarawak pepper, humous, summer vegetables, herbs and sesame seed, with Pinot Noir sauce.

LEMON from NICE & KALAMATA OLIVE, Creamy, crunchy cookie with pine nuts, basil sorbet, marzipan and iced black olives mousse
