Tasting of Wines from Domaine des Terres Dorées with Jean-Paul BRUN

Jean-Paul Brun is one of the magician of Beaujolais, probably the greatest independant wine maker of the region.

His family Vineyard "Terres Dorées" is located in Charnay-en-Beaujolais which is one of the most beautiful of the "Pierres Dorées" villages but known only for its basic Beaujolais. The vinyeard started there in 1979 with 4 Ha.

Always an innovator, Jean-Paul Brun made his name first with a stellar chardonnay beaujolais blanc – no wood to make it taste like a burgundy – and then surprised everyone by planting pinot noir, which you'll now find in three-star Michelin restaurants all over the world. Today his empire extends over 44 hectares – moulin-à-vent, côte de brouilly, morgon, fleurie – but he still vinifies everything in his home cellar in Charnay and retains an infectious enthusiasm and curiosity for beaujolais.

Tasting of an amazing selection of   CREMANTS from Maison BOUILLOT  (Nuits-Saint-Georges)

Louis Bouillot was founded in 1877 by Jean Bouillot in Nuits-Saint-Georges, and soon turned its manufacturing to the creation of sparkling Burgundies.
Since then these festive bubbles have become its vocation and reason for living.

Thursday February 6th, we will welcome Marcel Combes, oenologist from Boisset (Louis Bouillot Parent company), for a very convivial tasting of Louis Bouillot best Cremants, (a selection that we particularly enjoy at Les CLIMATS).

Tasting of a selection of Domaine Jean-Marc BROCARD wines (Chablis)

Jean-Marc Brocard, a qualified engineer, maried in 1971 Claudine, the daughter of a Chablis Winegrower, Emile Petit. He started learning about winemaking with his father in law. He soon became so passionate about winegrowing that he bought 0.3 hectares of agricultural land in Préhy from his father-in-law, which he subsequently planted. He then built his own wine cellars in the middle of the vineyards.
Today, the Domaine extends over 200 hectares across several different appellations of Chablis.
The company is run by two of his children: Julien and Céline. The management of the vineyard is run by Frédéric Gueguen, Céline’s husband. The family’s philosophy has meant that the Domaine has partly converted to organic and biodynamic farming, over the last 12 years.

Wine Table with Claude & Hervé MUZARD (Santenay)

The Muzard family have been winemakers for more than nine generations (since 1645) .

Brothers Claude and Hervé Muzard took over the running of the family domaine in 1995, from their father – Lucien who had started the same way (but aged just 14!) in the 1960s. They immediately chose to bottle wine under their own name instead of shipping everything to the négoce. Today about thirty-five percent of the wines are exported, but the largest part are sold to a list of private clients that major on restaurants and cavistes, in France.

Although Santenay is both their home and the core of their vineyards, Maranges, Chassagne-Montrachet, Pommard, Puligny, Volnay and even Corton-Charlemagne can, from time to time, be found in the domaine’s cellar, some of which have been bought in as grapes. The domaine produces overwhelmingly red wine (95%). Ten of the domaine’s sixteen hectares – also mainly in Santenay – are rated as 1er Cru. Claude is in the vinyeards and Hervé in the cellars.

Our Wine dinner will have 5 gourmet courses (Entrée / fish / meat / cheese / desert) each paired with a different wine.

Claude and Hervé will host the table and present themselves their wines. They do not wish to reveal the wine selection before dinner, in order to keep "the surprise effect".

To confirm your booking, an advance payment of 50% of the amount will be asked.

Facing the spectacular red wine day-cellar cooled to 16° for wine tasting, the bar opens at 6:00pm. 
Our sommeliers will serve you delicious Crémants de Bourgogne (sparkling Burgungy wines), Burgundy whiskies, Burgundy wine by the glass and of course any bottle from the 796 references of the wine list.

Our bar menu offers a selection of charcuterie and cheese from our favorite producers.
